Could open a can of worms flattening a shower floor.  If it was installed properly and is angled to drain if you flatten it it will most likely not drain properly after.  The other areas I don't see a problem.

Its hard for me to see the detail but cant see why you cant flatten the limestone and fix or fill the seams on the soapstone.
