I think you might have to do it with your hand held for each tile you want to hone if you don't want to hone other tiles next to them.  I am not sure there is anything you can place on the stone that will withstand a floor machine and diamonds.  If it would stick, I am not sure you would want it to as it would probably be a nightmare trying to get off the stone when you are finished.

If you are using the hand held, you can use painters tape to create a protection on the tile you don't want to hone.
