It is impossible to guarantee etching prevention on marble (assuming in fact that it is marble and not granite or a quartz surfacing product) material. Because of its nature these surfaces may or may not etch in varying degrees depending on what is spilled on them or left on them. In a wine bar the most dangerous culprits are red wines. The degree of acidity in them varies and some of these can etch the surface of marble depending on how long the spill is left there and if it is allowed to dry or not. Also, the color of marble and the region it is quarried from comes into play. Some marbles are more resilient to acid damage than others. So the answer to which colors will etch with what material spilled on them is "it depends". There are so many variables that a patent answer is impossible. There are various penetrating sealers that help protect from etching but will not PREVENT it. If you choose to use a coating type of sealer it will certainly protect more against etching, but there are potential maintenance issues that go along with coatings. Best advice, use a penetrating (impregnating) sealer and make sure to immediately wipe up anything acidic that spills.
