This is known as Rain Forest Brown..It is a very brittle stone and it is kind of trick to polish. You have to be carefull with hot powdered otherwise it will orange peel really bad.  Try honeing to a very high grit and if you have to use a polishing powder try a granite powder or a very low acid marble polish.
