First off it is messy,lots of tape and plastic for carpet wood baseboards etc...As for how to do it we use a 17" floor machine with water tank and stratagrit brush head mix stripper like stone pro formula 51 with hot water let sit (not dry) for 10 15 min then scrub with the floor machine and water this process will take off coatings and resurface the tiles after this we clean with an alkaline such as Deep clean gel, neutralize dry and seal with something like stone gloss an acrylic topical type of sealer another good one is clear seal plus from Superkrete we generally do 2-3 coats then a few coats of wax and done deal.
