What I have one in the past is use clear packing tape ( good quality not the cheap stuff) and tape off the granite. be sure to cut the tape directly on the grout line and make sure it stick well. Then when you hone, hone right over the taped off granite you shouldn’t have any problems.  You may want to clean the granite with some acetone before taping , this will help the tape stick down. 

After you are done honing and polishing remove the tape. You may need a single edge razor blade to remove to tape.

Greetings all, I'm looking at a Crème marfill floor with a lot of granite inlays that the owner wants polished. and may need some light diamond work.  I don't want to touch the granite. anyone have a technique to work around the granite?
