Thank you all for all of your input. It is very valuable.
As of now I am planning on giving customer an option of just simple cleaning and full restoration which will include grinding, staining and sealing. Unfortunately I am limited to the materials they specified and don't think they will allow me to use something else.

Is there a price that I can safely quote to this customer? It is 900 sq ft, hand work on perimeter and with rough finish. Being a restaurant I don't think is necessary to go up to the polish (is brush finish now).

I am an Ameripolish distributor and the color juice could work it is for outside concrete. They have dyes that can be used with water or acetone as well that work well and they have a sealer that can applied to help them with UV.

You really can't restain an acid stain since the acid has already reacted with the lime in the concrete. The best thing to do is remove the existing sealer ( either grinding or chemically ) and use a water color stain on it. Go to www.smithpaints.com or www.engraveacrete.com. I was asked by one of my commercial (restaurant) customers to clean and to re-stain concrete inside patio. They specified acid stain and a sealer. I have never done acid staining before. Is this something that I can done myself or need to hire concrete refinishing contractor?
I am very handy and the concrete is brushed finish. Can somebody explain to me how is acid staining done and what should I be aware of. should I also strip previous stain?
