Hi Baird,
Depending on the stripping results if you can use 120g coppers(gran quartz surface pro are nice) depending on the stone you can go right to 50g and overlap the 120coppers by moving the pads further out on your pad driver. In this manner you can use the base board or wall as your guide just protect it. After the coppers you can use agressive copper pads on your makita to get the edges done. 
It is possible that you will be able to go to 120 resins after the coppers but you will have to check the stone. The stone looks good where you scraped it away with the knife.
Is that green marble- looks pretty flat what ever it is. You will be fine-Plenty of folks around here to help you if you need it. Follow the path of least resistance and good judgement you wont go wrong.( a really effective stripper helps too!)
