If there is not damage in the stone use a honing powder, if there is damage to remove then remove the damage with what ever diamond you need to remove the damage then finish with a honing powder to achieve  that nice honed finish and then seal.

What's the fastest/best way to remove a polish from a white thassos shower so that I can leave a honed/matte finish ?

 I know that if it were a floor, I would try to do it with a 400 grit velocity pad and then use honing powder, but in a shower I am not sure. The reason that I am trying to strategize on this is because I have to do 3 showers in this house and if I can do a great job without killing myself it would be nice.
