I don't think the strips are going any ware. When you look at the tile the veining stops on every  strip, it appears to me that the 1.5" or so strips are glued together to create the tile. Check if that's not like thin vernier on top and different material under vernier kind of like they make table tops or other furniture.

After looking at Stuart  comments I went back a looked at the picture again. There are no fills in the stone so the comment on possibly being  botticino is probably correct.  M y concern is still the strips in the stone. if you diamond hone  it , I feel you are going to remove the strips and the customer may not be happy. As always I recommend you TEST IT !!! 

The test should be in a closet, or somewhere less noticeable.

   If the strips do hone away what is the customer expectations ?  If the customer want the strips in the stone finish you have a challenge. That is to hone the floor, repolish the floor and maintain the strips. If this is what the customer is looking to maintain, then this will be a totally new discussion
