If the coating has cracked and delaminated it may be easier to remove. Probably can break off a good amount just be careful where it is still bonded.
 You will need chemicals as well and you may have some tough areas to deal with.
We have found some customers if you show them samples of the travertine and explain the pro and cons they may opt to keep a natural surface. Or like fred says just recoat it.
Richard james spec chemicals might have a good countertop coating to use. The big question is how much are they willing to pay you to repair their new table the job could take some time.
