its kind of like playing with dynamite to tackle concrete countertops, alot depends on how it was made. If it was stained, then you are going to remove the stain, and you will have to try and match the original color...plus there is a good chance you will be showing more and larger rock than the rest of the top..I would do as little as possible, if it is mild, i would just try a 400 grit wet sand...
 
when you say sealer, that depends what you are talking about...a pentrating sealer or a topical like a urethane? i would recommend just using a guard product like Bellatex from Meadows on a polished top. I turn down these jobs all the time because you are at the mercy of how good the concrete fabricator was...generally he is a flatwork or DIY guy who has since gone out of business, and cannot be found..I did 3 last year and each time, asked myself why am I doing this ...
 
have them sign a disclosure limiting your liablilty first and foremost..

What is the best way to remove etching from concrete countertops?  Would it be the same as stone countertops such as Marble?  Also, what is the best type of sealer for a concrete countertop?  It is in a bathroom.
