Tony,
I am not 100% sure but from the pics it looks like it may be time for a good oiling using mineral oil.
Those green soapstones look naturally grey when honed and I dont think it comes polished.
If it it scratched light sanding will probably do the trick,then apply mineral oil and buff of hard like a color enhancer.
You can even finish with bees wax.
As far as the water damage soapstone super dense talc. Not sure if the epoxy would work maybe sand out the damage if it isnt to deep and you wont risk losing the edge.

What would cause an onyx green iron soap stone to fade in some wet areas? Could it have been dyed?

Also a small one inch area on the edge, under the faucet is deteriorating. Is it okay to use a stone dye

And epoxy the damaged area.
