I would refinish the marble by honing starting with a 400 to see if it gives you an even consistent pattern. It may be necessary to go deeper. After the 400 you should be able to polish it with 5x or similar powder. The only precaution is that the marble may turn yellow as the result of the steam cleaning. It may not but I would warn the customer of the possibly.

Have a job involving Italian Marble floors.  There was a fire in the residence and a company came in and did steam cleaning of the floors.  We have been called in to polish/refinish.  Any advice on precautions with Italian Marble floors?
