I tend to be a little reluctant in using an acid on marble, especially HCL for several reasons:

1. The acid reaction is very difficult to control
2. If the proper dilution is not used it can erode away some of the softer veins leading to advanced deterioration
3. The acid reaction can look very spotty
4. Some grades of HCL can stain and discolor the stone
5. Fumes can be harmful to people as well as metal surfaces. I have seen metal tarnished by the fumes from HCL
6. Craftsman must have a high degree of experinece


If I were to use acid etching I would choose a milder acid such as sulfamic. The reaction would be slower and easier to control

While I think that honing with abrasives can leave a better more uniform(possibly) finish than a surface attacked and left open by a strong acid.
If the fabricator is a knowledgeable and understands and knows the stone well he can probably produce finishes that will attract some consumers.
I wonder if these finishes are even less prone to etching then the low matte finishes(80/180g) we create for some clients.
My opinion is that in the shop under the right conditions using the right dilutions on the right stone(and they got good results) which can be maintained - why not?
However I wouldnt want to have to go into some high end residence  and refinish that surface using muriactic acid.
They would have to settle for a mechanically honed surface.
