We cleaned 17000sq ft of this type of granite few months ago in UofC. We used alkaline cleaner and our truck mount. That was piece of cake. Sealer was specified by architect (Miracle 511 with enhancer) and we used floor machine to apply. Came out little darker and that was what customer liked. You have to be careful how you apply in the edges and corners because you may end up with color variation. 
Polished granite if is in good shape I would only clean and buff the sealer in.

They want the stoned cleaned. For flamed granite I normally use a honing brush with an acidic cleaner, but  that is out because of polished inserts. I assume I can use an acidic cleaner, will test 1st. followed up using a color enhancer sealer. Test to make sure it does not discolor grout lines or polished granite inserts.
