i recently saw an acid based cleaner from American Building Restoration that worked really good on terrazzo. of course you have to repolish after you apply it since it etches the surface..but it did remove most of the stains immediately.

Tony,
 
On the stain seeing you are honing you could try an acid base cleaner to try and remove the remaining stain, or apply the peroxide poultice another time.
 
For as coloring the concrete you can use concrete dyes to change the color of the cement. Just remember a little dye goes a long way.

I am working on a terrazzo floor. 50 years old. I need to know 2 things. First  there is a furniture stain where the old counter was. We honed it starting with 50 grit. lightened it some what. Next used hydrogen peroxide
40 %. Helped a little bit more. 2nd there are some divots that need to be filled. The original concrete base is white. Of course white does not match now. What do I use to color or tint the concrete?
