Is that sanded grout?(harder if it is)-Use tools like fein(dustless grout removal or alpha has the eco-cutter with specific joint size blades. It is virtually dustless if you have a solid hepa vac. Replace the grout with a nice linen or beige tone(unsanded) color mixed with 100% latex and proceed to flatten.
The joints are too wide to make it look monolithic so you will have to discuss that with your client.

   Actually, regrouting is advised when flattening a floor, even if it doesn't need it. The grout helps build ramps up the lippage slope making for a slightly easier task. As you work you'll be cutting away the excess grout.
