Stripping can be tricky depending on what they put on the stone.  If they used a polyurethane or an epoxy sealer it is going to be a real chore to remove it. Conventional strippers wont work. On the other hand if they used a standard acrylic finish than conventional strippers should work.  Here is what I would test
 
Test one.  Apply a standard stripper according to directions and allow to sit. Agitate with a nylo grit brush and pic up with a wet vac.
 
Test Two  Apply a urethane stripper, I like using Back To Natures Ultra strip and allow it to sit for 2 Hours and than agigate with nylo grit and pic up with wet vac.  If this method works it is going to be very slow and the stripper is very expensive. Of course the test will tell you.  You ll also need to prepare the customer for the cost if this method works.

Pros,

In addition to Jasons question we also have a potential client that is
doing a major renovation to their residence. The Library has a blue stone
floor. They want to remove the shine (which is a high gloss sealer)
Question: How does the stone respond to stripping? They don't want to
change the rough texture of the stone (grinding it down) just remove the
shine and have a flat or matt finish. We were thinking.....test area where
we strip sealer and then run over the stone with a Malish Brush on the
machine to hone. Seal upon completion? Thanks.
