Jason,
we like to start with electroplated diamonds or sandpaper on counter tops. We use the alpha dust buddies and Hepa vacs.
We have dry diamonds but rarely use them.
Like Mike we like to start dry and finish wet.
We generally start with 220 dry and then go wet with 400 or 800 and polish. It just isn't needed in most cases to go past 800 if you use good diamonds and give them some time.
We tend to go higher with blacks and Thassos .
Serpentines  are a another story.
Serpentines respond well to dry polishing just like granite.  
We also use 5 inch diamonds on a five inch driver-saves time.
We normally dry polish which is quick and free of slurry slinging.
It takes a bit of practice but once you get it you can move though counter tops quickly and not waste all that time cleaning slurry.
If you are getting splatters all over the place you are spinning the tool too fast or using too much water. You can tape edges with tape if you are only doing a couple of cuts or just use plastic to quickly mask.

Today I polished a granite countertop edge to 3000 going dry, using my concrete 300 cfm vac. No dust anywhere. I couldn't believe it. Containing slurry on marble tops is always a bit of a headache, so I am thinking if I can restore going dry I will have no mess, and be done in much less time.

 

I know some go dry for touch ups.

 

Which pads could do you use? I ordered premium pads from SCC, but I see Viper and Talon make pads as well.
