You never want to grind down Saltillo tile..It has a glaze on it and you will remove the glaze and you will be left with nothing but a mess

Custy has about 1300 sq' of saltillo tiles, 20 years old on plywood subfloor, wire mesh, mud install. Extreme lippage, with an old sealant on it. she would like them ground level, grout fixed. I explained that this was a bad idea due to the inconsistency of install. Am I correct or can this be ground down? Help is appreciated.
