If you have flattened marble before you will like working on onyx.
!800 is a large floor and I always figure 2 men grind, hone and polish 200 sq ft a day.
It generally works out to more  sq footage but that's a good guide.
I would say 9 days with 2 men but will finish in 7-8 .
With four guys who work well together probably a week. We do 1000 sf in a week with one crew.
I based this on residential-commercial usually goes faster.

The first one you do-no matter how you prepare for it will be challenging.
It will definitely take more time than you will plan for!
The onyx will cut fast-there are other issues to be more concerned with.
What type of machine do you run, pad drivers, diamonds and how you place or affix them so you aren't chasing them for the better part of the day.
Its your choice which metal grit you will start with but for onyx I would start with a 70 metal full face tool with a good bevel.
Then run a 120 grit copper to transition to resin diamonds. Take it too 800 grit and polish.
You will need a good system for polishing as onyx will etch easily.
What type of grout was used and how extreme is the lippage. Those two questions are key to your success.
