If you elect to fill these void I would consider possible using a flowing polyester filling material instead of a knife grade. The flowing product will go deeper into the open areas.
Be sure to clean totally before trying to fill. If you get the areas totally clean you could use a clear flowing product and not have to try and match the color of the stone.

Spalling of this is super common around shower floors and next to doors and windows, where there is moisture wicking into the slab. If you fill with polyester it will pop out so do not guarantee it. If there are voids you can use an acrylic grout and sand it in with a dry pad, 220, then 400 which will leave a nice hone, hit gently with a 10" 80 grit Tynex brush (careful not to dig out fill) on a hand machine to get back that sparkly look finish and blend into the floor. The acrylic grout can breathe and will not look as good but it will last a lot longer.

You will fill these voids with a matching polyester resin (overfilled) and then make them flush to the surface of the stone.
The surface should then be refinished to a uniform honed finish and sealed.

What you are seeing are areas in the stone where the veins are opening up. This is not uncommon in some of these types of stone. This could be caused by the cleaning practices, polishing practices and just the natural of the stone.
