Poulticing on vertical surfaces are a pain especially high up. Of course the fan is pulling the grease right into the stone.
We just did a grease laden pietra countertop and lower backsplash using paper towel soaked in high alkaline degreaser.
After repeated applications and elbow grease it all came out as it wasn't that deep.
If you have a light granite chances are its way deep.
I think prosoco's fireplace cleaner or the best degreaser you can find.
Too bad they will never move the exhaust fans then you could change out the first few rows with something easy to maintain.
