Some questions; what color is the grout? If it is a dark color it can easily stain from the AO powders and you will want to seal it REALLY well if you go this route, which I think is best if the floor is not flat (has lippage).  If you use a vortex/spinflex type pad it is not as much an issue But I would still seal the grout first, especially if you start at a 200 where you will get a creamy slurry developing. 

If you go with an acid solution, you need to determine if it will work with the stone. It it is super veiny it will accentuate this as it will react at a different rate with certain views and you will end up with a stamped leather look.   Also, if the grout is dark or has red tones it can change it all together.  If you use and acid i would use a sulphuric with a little (5-10%) muriatic and a cup of neutral cleaner to help it lay (not bead up or you will have a disaster) and allow it to be weaker but dwell longer. You don’t want your finish relying on your dwell time.

I think the general consensus for grout to cure is 7 days.
However polyblend says there grout cures in 24 hours.
I think you can hone it after a few days .
As far as knocking off the polish use vortex pads to start.
Use.a 220 red dot vortex pads to start.
You will need to get the edges nd any picture frames .
Place a white pad between the vortex and pad driver.
Finish with another vortex  pad or any way you normally do.

I have a job to restore a newly installed polish marble floor to a honed finish. It was grout today , Wednesday 03.04.15. When will it be safe to start honing the floor?
Also any tips on knocking down the gloss besides using diamonds and honing powder.
