Subject: Remove excess concrete/mortar from Terrazzo

I'm looking for your preferred method and guidance to remove concrete from a Terrazzo floor. The floor was installed in the 60's. Customer is doing a renovation and removed some cabinets. In the attached pictures, you'll see the buildup in the lighter colored areas where these cabinets were. Acid? Metal Grinding? Combination? Other? Thanks for your input.
