This attachment might help. For a janitorial strip and wax you usual go with 2-4 (3 avg) coats of wax on a vinyl floor. The floor doesn't need to be perfectly stripped and the work can be done pretty quickly. A gallon of stripper can cover 5000 or more sf. A gallon of wax over 2000 (less for the first coat). For vinyl floors that are very often stripped and waxed (where both are easy) janitorial companies will charge $.35 psf -$.50 psf. If one is  foolish enough to work for  SMS it will be less.  But remember that they don't work at high margins. A 35% margin in a $.35 psf job equates to $.91 on a 75% margin job. For stone I would  charge $1.50 to strip for a relatively easy job . Stripper and Wax for 2500sf would cost about $100 in materials and one hour per coating. One Stripping maybe 3 hrs for 2500sf  if easy.   The q is how many times does it take to strip?  I had a travertine floor about the same size last year and it took 3 days to strip because the hook was imbedded in the holes. Good to test.

I think some of our partners either have janitorial divisions in their company or came out of Janitorial industry.  The project is 2500 square feet worn granite that somebody previously put a topical coating on. Contractors we're in the area doing work and made a mess of the floor. The building managers just want me to go with in strip off the existing coating and apply a couple more coats of an acrylic to make it look fresh again. It's one long hallway and one open space all the surrounding surfaces are granite tile walls.. just like us on some projects we will sometimes use a price per square foot basis. That's why I am asking what the going rate is
