That's sounds like a lot of hand work if there is large area's.
We would probably use 70 grit electroplated dry with dust buddies and hepa vacs to break the polish.
Then use silicon carbide or diamond brushes from 80 grit to the desired texture and color enhance or not.
I have heard media blasting may work but know nothing about it.
