Hi Amy 
When it comes to oil staines like that on granite, they take way way to long to remove but are extreemly simple to remove... usually. 
There is no money to be made on a job like this. You will just be wasting your time.
What I usually do is tell them how to remove it them self because the poultice has to be re-applied every other day about 5 to ?? 15 times? Maybe more. It usually works as long as the customer doesn't give up. 
When there's polishing involved I have them call me when it's ready or after they give up. 

I usually do the first application to show them how to do it. 
Mix in a cereal bowl hydrogen peroxide and baking soda to a consistency of pancake batter then pour it out on the counter top. Cover with seran wrap.  Then you can easily move it around with out getting any on your hands. 

Even if it doesn't turn into a job I alway tell them or show them how to do it during an estimate.

They'll love you for it and tell all their friends after it works and will call you when they have a real job you can make money on.

Poulticing jobs such as yours can be tough.

There are many concoctions you can try.

Mangia macha, stainreaper,

Diatomaceous earth and

Lacquer thinner or mineral

Spirits.

So many to use.

White granites will be tough to work.

Can take many applications .

Test first

One of the jobs looks like a cutting board or a coffee pot sat up against the granite and another stain is around the stove area. Looks like grease.
my question to you- what will take away the grease from the granite?
