Maybe antiquing brushes would work. I treated a brick floor a while ago with the low grit malish brush and, although I will not say it absolutely flattened the floor, it took off the sharp edges. The tiles were more of a thick terra cotta so maybe the bricks are harder.    Made a big mess of thick orange slurry.

I think you have to be very mindful of the sanded mortar grout.
May want to consider using a hard bond metal diamond for the initial grinding cut then move to brushes or DIP's.
