Hey Stu, we've flattened a lot of Stone tiles and concrete.
I agree with Bayard, if you can get away with knocking down a few high brick and saving the normal appearance that would be an easier way to get through the job.
But if you got to grind and level you're going to need a big 220volt machine with a vacuum
Like a Lavina 25 & egrmator s36 vacuum.
On a floor like that I would start with 3" 30 grit beveled metal bond lippage cutters. That way you're wasting minimal time cutting stock and flattening.
Once it's flat each successive grit goes relatively quick.
Metal bond 30
Metal bond 75
Metal bond 120 finish here
Resin bond 220 or here
$10-12per sqft.
2 man job 1 week with Lavina & vac. They may rent them close by depending on where you are The mess is minimal kind of.
Expect to remove several hundred lbs. of brick powder. I wouldn't do it wet unless you want a big mess

It will be a big mess-but do-able.
I think you have to be very mindful of the sanded mortar grout.
May want to consider using a hard bond metal diamond for the initial grinding cut then move to brushes or DIP's.
