We just wipe down the back splashes with a sponge -if your polishing you can always run 2 inch  tape at the bottom of the splash to make cleanup easier.
As far as breaking the polish on an ogee edge(depending on the material) you can always use sandpaper shaped to the contour of the edge by hand. You can also use a flexible driver and sandpaper or even a D.I.P.
There are other methods as well-sandpaper works pretty well.
