This is an interesting discussion, I thought slate was not a calcium based stone and could not etch.  Are you sure it is not the calcification of hard water or excessive salt from conditioned water.  How does it respond to a blue scrubbing pad?

I would suggest honing with medium (400-800 grit) honing powder, but you may have to go up or down to get the best results. Also finish with SCI countertop polish which has some acrylic content, dries quickly and has a decent odor.
