Yeah-gotta love those surfaces-we get more and more surfaces that are sold under multiple classifications.
We have even had a few that had banding patterns where some of the bands acted like a marble and other bands acted like a quartzite. Not easy to refinish.
What we do is ask (when we can) for a sample piece so we can become familiar with the material and give the client and or stone predictable results-

There are several.  One that comes to mind is academy black. But there are several gneiss stones that will etc also
