Hi Doug, where masking a kitchen getting ready for granite countertop repair right now. If we were polishing the granite it would basically be the same way. 
We mask from the front door all the way into the kitchen laying down runners first then plastic masking doubling it over the runners then masking all the cabinets and backsplash exposing only the granite countertop. 
I'll send you pictures in a little bit once it's all masked up.
