Just to add-what is the condition of the counter top?. Its rare to have to hone and polish an entire granite counter top,many times we find ourselves just honing and polishing heavily used area's.
Unless the client is changing an entirely honed granite counter top to a polished finish which could be quite tedious depending on the granite.
Clarifying the scope of the job may make it easier on your guys. as Fred said masking and protecting the work areas are very important part of the process.
Let have some more details of the work-we can give you more info.

Honing and polishing a granite countertop is done all the time just make sure you use plenty of plastic and protect all adjacent surfaces. I would also make sure you have a wet vac nearby to pick up any slurry . Using a slower or rpm will also help
