That's Botticino-great to work on and hone-
I would do the first cut dry with 120 or 220 grit sandpaper or electroplated pads.
Then maybe  finish with DIP's for a uniform hone
I see some pits that could be filled after cleaning using clear/creme Bonstone glacier.
The joints need to caulked.
I would charge a flat rate for a day. Wont take you too long but with travel it a good half day.
