What we do is similar to Baird. We use methylene chloride and a black 50 grit nylon bristle brush 20 inch on the floor machine and lean it into the grout joints and around all the pillowed edges. 
That method strips so clean there's nothing left on the surface except bare clay nice and smooth. We don't use any other grit after that. We just rinse and scrub rinse and scrub until it's all washed away. 
Then seal with the acrylic topcoat Matt, medium gloss or high-gloss

Yes but hard work. We had a project a while back and scoured the surface with an 80 grit Malish brush, that removed all of the sediment. Then it's just a matter of finishing with higher grit brushes and sealers.
