I agree on coated stone, I have dealt with this only once,and yes methylene chloride is the only thing that will effectively remove it, however if you don't have previous experience with this I wouldn't recommend you practice here.fumes are intense and it is a dangerous chemical.
The second issue is what honed condition was the stone before coating was applied,judging by what I had it seemed coated @ 400, then to completely re-hone
To 3000 ,polish with mb 20 ,to a condition they know ,with the deep "rock star" polish
Is a challenging and very time consuming process .
If this were me I would kindly say thanks but no thanks
At least charge accordingly!! For me will sometimes be as much as replacement
