Mike-Regarding the shower stall-Bill makes a good point. You don't want to change the pitch or slope but you can use 70 grit or 120 electroplated pads to knock down the lips and even it out. (light grinding)
You have to follow the contour of the floor-but its small enough you can do it with a hand machine then run some DIP's on a floor machine to finish.
As far as the seams-you can remove the existing polyester and refill making a good color.I can't see the detail in the pics but I think the seams aren't level.
Soapstone is soft-you can try and level the pieces or just flatten them.

Could open a can of worms flattening a shower floor.  If it was installed properly and is angled to drain if you flatten it it will most likely not drain properly after.  The other areas I don't see a problem.
