Anthony-you could use a richard james product such as TK-6.
They have a matt and high gloss finish.
You can add shark bite to it to reduce the slip-I would talk him into using the matte finish.
You could also use sigma seal and then finish with int'l finish from sparks south west.
Just to add-I never liked putting sealers and or coatings on exterior stone because of potential moisture issues.
I would check all surfaces for moisture just to be sure.

Slip tests are available for above a .9 on dry and above .6 for wet surface.  You could even apply shark grip to the coating for added slip. 

 

Pics above is a slate floor.  For Mexican tile you might do a test, a densifier might be needs as a first coat to try and close up the pours of the Mexican tile and then apply the xGen tile coating.
