The client has advised it could possibly be either drytreat vetrimella or Clearstone. The coating is approx 3mm thick!

It’s dileminated around the sink area.. never knew a “stripper” could remove resin or UV cured coatings!

You scrape a true marble you may create stuns marks and permanently damage the stone.
My go to test is a paint stripper(methylene chloride) to see how thick and hard  the coating is.
Use a razor blade to pull off the melted coating o see what you have.
I have never used a heat gun and a scraper. Mostly stripping by a combination of mechanical and chemical means-
