Are you doing multipurpose white thinset ,or epoxy?
I typically on small numbers use latacrete epoxy thinset,and always over 23 years of custom marble installations,use epoxy grout, I can set in epoxy and grout the same day, grind the next day
If thin set, I would wait a minimum 3 days on thinset,and 2 days on Portland grout, to avoid moisture issues
