Have you calculated the number of hours it going to take you to do this work? Once you know that then calculate. In the training we teach a timing process for both granite and marble, so for us to calculate the time needed we have and teach a formula for the process. Have you ever honed an polished a granite floor ? what grit do you plan on starting with?
I use a daily rate for pricing.  The pricing is X dollars per man day. Then the number of man days times your daily rate and you have the pricing.
