Tony, polishing ceramic tiles is not unlike polishing Marble and we typically charge about the same. Basically you would work a 5 sf area for 1 minute (translates into 2 min for 10 sf) and repeat if you need extra time. The big difference is that you need a fair amount of weight and the stuff really sticks to the floor and grout lines so be prepared for extra cleaning. We use NCL Ceramic restoration cream, which is a one step process. There are others out there that are two step. I have not compared the results because the NCL stuff usually works fine. Below is an example of how it works on a 120 year old floor.
