Hey Chris,
I think those tables are coded with a type of polyurethane. They’ve been around for a while so they start to delaminate.
We have done a bunch of those tables commercially and residentially. In some cases you can shave off the coding with the four-inch razor blade. Or you can snap it off depending on the thickness. It will damage the surface of the stone either way. Most of those type tables are marginal quality stone. Once you have the Coating off you will need to repair any holes sorry I was busy and then aggressively Hone the face of the stone and then bringing up to a polish.
